O'Leary Walker Wines Polish Hill River Riesling draws from two neighbouring vineyards in Polish Hill River, Clare Valley. The vines are grown using organic practices.
Grey loam soils over sandstone and slate make up the vineyard. Polish Hill River's slate component is what differentiates this wine from its sibling Watervale Riesling (whose soils contain limestone).
The fruit is harvested in the cool of the night. Each batch is kept separate in stainless steel tanks. The grapes are destemmed, crushed and gently pressed, resulting in a fine free run cut of juice. It is chilled and settled to preserve the purity of the fruit.
The juice is racked off solids and seeded with yeast. A cool, temperature controlled fermentation follows, lasting up to 14 days. Prior to bottling the wine is chilled and filtered.
Light straw, O'Leary Walker Wines Polish Hill River Riesling has delicate floral perfume with fine minerality and balanced natural acidity. Cellaring potential is 12 years.
